oops!!

Well, I completely forgot I had this blog! guess the holidays got the better of my time LOL. I'll try to get back to posting asap - i have collected lots of new recipes to share. Besides, a new years resolution to post in my blog again will be much easier to keep than losing those nasty 15 pounds! icon_eek


Mandarin Orange Drink

3/4 cup milk
1 small can mandarin oranges, drained

Fruit And Spice Margarita

1 cup boiling water

3 bags Lipton =AE Orange & Spice Flavored Black Tea Bags

1/3 cup sugar

1 cup frozen strawberries

1/4 cup tequila (optional)

1-1/2 Tbsp. lemon juice

1 cup ice cubes (about 6 to 8)





In teapot, pour boiling water over Lipton =AE Orange & Spice Flavored

Black Tea Bags; cover and brew 5 minutes. Remove Tea Bags. Stir in

sugar and chill.

Frozen Watermelon Margarita

2 1/2 cup seedless (or seeded) watermelon, cut into 1-inch cubes, rind
discarded before measuring
3 tbl freshly squeezed lime juice
4 oz tequila
2 oz cointreau or 2 oz triple sec
1 1/2 cup ice


* Put cut watermelon in a plastic bag and place in freezer for a
minimum of 2 hours.(If time does not permit this step, add a few extra

1/2 cup chopped onion
1/2 cup chopped green pepper
2 tablespoons vegetable oil
3 cups hot cooked rice
3 hard-cooked eggs, chopped
1 1/2 cups (6 ounces) grated Cheddar cheese, divided use
Salt and ground black pepper to taste
1/2 teaspoon basil leaves, crushed

Lemon Coconut Muffins

1 cup all bran
1 1/2 cups milk
1 lightly beaten egg
2 tablespoons oil
juice and grated rind of 1 lemon
1/2 cup coconut
1 1/2 cups self raising flour
1/4 cup sugar

Preheat oven to 375=BAF, prepare pans.

Place all-bran and milk in a large bowl. Stand for 5 minutes until
softened. Stir in egg, oil, lemon juice and rind.

Combine flour, sugar and coconut and stir into wet mix until just
moistened.

Spoon into pans and bake for 25-30 minutes.
